ONE-POT CHICKEN WITH LEEKS, NEW POTATOES AND GRAPES

This is a very mellow dish, especially with the addition of grapes, which is wonderful. If you want a thinner gravy, you can decant everything from the casserole and reduce the remaining liquor by boiling fiercely – you could also add a knob of butter and a tablespoon of crème fraîche or cream if you wish. This is a good protein-rich ‘all-in-one’ meal with plenty of vitamins and minerals, including iron, zinc and B vitamins.

Serves 4

1 tablespoon olive oil

6 chicken thighs

500g new potatoes, sliced

2 leeks, sliced into rounds

150ml white wine (or omit and use 300ml chicken stock altogether)

150ml hot chicken stock

Small bunch of tarragon, left whole

100g seedless grapes

Salt and freshly ground black pepper
